SEPM server did not have the correct definitions until after I restarted it.

It was connected to the internet, but it had defs from 3 days before. I want to make sure that it is ALWAYS up to date. Why would this have happened and how can I be sure that it is doing what it needs to do in order to ALWAYS be current?
